Fruited Berliner Weisse. After an initial 9-month fermentation and conditioning in one of our American Oak Foeders, the resulting light, tart and slightly funky Berlin-style wheat beer undergoes a second fermentation with watermelon and a clean ale yeast. This second round of fermentation in stainless steel ensures the driest and spritziest beer possible. The addition of watermelon subtly nudges Champagne Toast into decadent jolly rancher territory, transforming the base beer in flavor and aroma. Ultimately this lengthy process yields a brew that is tart and jammy, a crisp rainy-day sipper as your body readies itself for sunnier days ahead.
